Our 'Bar'

Well here we are, at King Seany's Bar. Thanks for stopping by, and don't forget to leave a tip. Here you will find a large selection of my favourite drinks recipes, from all around the World. Now, I'm no alcoholic (hic), but I have tried a lot of these...not all on the same day obviously. During the many parties we have had, I dread to think how much we have actually consumed - but I do recycle the bottles.....Please feel free to amend the recipes to your own taste, this is the beauty of Cocktails, but I'd suggest subtle changes from the main ingredients give best results. Firstly there are a number of featured cocktails - favourites which we drink time and time again, then some more to try....

KILLER SANGRIA

I do enjoy a good Sangria, although I've never been to Spain!

It really doesn't matter what you use as the base of the mixture - any red wine will do. For the punch which is pictured below you will need a large bucket (we used a plantpot!), or caldron, or you could of course use less of each (if you are short on drinkers).

6 Bottles of Red Wine (anything)
2 Bottles of Vodka (any brand)
Juice of 4 Oranges
Juice of 2 Lemons
Juice of 1 Lime
8 Oranges
2 Lemons
2 Limes
Angostura Bitters - 10 dashes will do
4 or 5 capfuls of Grenadine
Castor Sugar (to taste)
lemonade (to serve)
ice

Sangria in a giant plantpot Juice the lemons, limes, lime and oranges. Add bitters and Grenadine. Pour in the sugar into the mixture to taste, mix til dissolved.

Cut the remaining fruit into mouth sized pieces, removing any pips along the way. Take your large bucket or caldron and place fruit into it.

Pour juice mixture over fruit. Cork the wine, pour over fruit, and add Vodka. Mix together with a wooden spoon.

Sangria is best left for a while, 24 hours if you have it, in a cool place. If the fridge is big enough, that's fine, otherwise a garage/cellar/hole in the ground will do. Cover to protect from aliens and mooses.

Serve into a glass (a big one is fine) with a few chunks of ice, some of the fruit, and top with lemonade.

DRINK!

VODKA JELLY

Vodka Jelly is not hard to make, it's just a case of getting your quantities right! If you don't, it just won't set.

Any jelly mix will do fine, strawberry and raspberry are obvious favourites. Any brand of Vodka will also do just fine.Half eaten Vodka Jelly!

Basically you mix the jelly as you would normally, only using 80% of the recommended liquid. Substitute 40% of the liquid for vodka, and the remaining 40% hot water, and mix until all jelly has melted away. Pour into ice cube containers, shot glasses, or a bowl will suffice and allow to set in the fridge. It depends on your fridge, but a few hours should be fine - but make well in advance.

Next is the fun part....drinking it. Well it's not so much drinking it as letting it slide down your throat. Don't worry you won't taste the vodka in it, the jelly is nice though. Don't eat too much, remember how much vodka is in it.

You can also try this recipe with Rum, although I wouldn't recommend the 80% alc rum, which I brought back from St. Lucia .

CHAMPAGNE COCKTAIL

Simple to make, and not necessarily expensive either. Take a Champagne glass, put a teaspoon of sugar into it, and add a shot of Brandy. Now mix in a little Angostura Bitters, then finally top up with Champagne, or sparkling wine will do if money is a problem. To enjoy this drink at it's best, I'd suggest relaxing in a jacuzzi.

QF

QF CocktailsThis is an abbreviated name for this cocktail. It's not hard to make, but the ingredients can be a real struggle to locate, unless you are in a big City. We had to call 10 off licences before we could locate a bottle of Midori, and Amaretto is also hard to come by......anyway, should you be able to lay your hands on the four ingredients, you will have the basis for a great cocktail party! So, the four ingredients required are: Baileys Irish Cream (or equivalent), Midori (melon liqeuer), Amaretto, and Kahlua (Coffee liqeuer). You will definately need some very small glasses - preferably shot glasses. The quantitites are roughly 25% of each, to fill the glass. First the Amaretto, followed by the Midori, then the Kahlua. Just pour these slowly and carefully. It is quite difficult to keep them seperate, but with practise it can be done. Finally add the Irish Cream, slowly over the back of a teaspoon. It should sit on the top of the drink, much like the head of a beer. Most importantly, drink instantly and down in one go. Have another. Or have six.

MULLED WINE

A great 'family' drink at all times, especially party time! You will require: 70cl Red Wine, 145ml Brandy, 285ml water, 285ml Orange Juice, 3 tablespoons of Caster Sugar, 2 Cinnamon Sticks, 1 teaspoon of ground coriander.

Take a large saucepan, and add wine, water, orange juice, sugar coriander, broken cinnamon sticks, and heat for about 8 minutes, without boiling. Add the Brandy, then strain the liquid through a sieve to remove the spices. Pre-warm glasses, and pour into, and serve.

RUM COCKTAILS

Rum Punch : 2 measures of Dark Rum (Mount Gay is good), 1 measure of Orange Juice, 1 measure of Pineapple Juice, 2 dashes of grenadine, grated nutmeg. Mix together the orange and pineapple juice in a jug, add grenadine and a grating of nutmeg. Stir well. Put plenty of ice cubes in a tall glass and pour......great to drink whilst enojoying a sunset in the Caribbean....Note there are many variations on the Rum Punch Recipe, depending where in the world you may be. Angostura bitters is widely used, as is Sugar Syrup and Lime Juice. If you are in the Caribbean, take a trip on any boat, and you will find the punch flows freely, a lovely red colour with a distinctive smell. May I also suggest you bring back a few bottles of 'ready made' Rum punch, as this will almost certainly be cheaper, although not quite so much fun.
